Diamond sharpening stones
DMT and Lansky diamond plates cut faster than conventional abrasives and maintain their flatness longer. Available in coarse (200-325 grit), fine (600 grit) and extra-fine (1200 grit) options. Diamond stones work on all steel types including hard steels that defeat conventional abrasives.
Waterstones and combination stones
Japanese water stones and combination oil stones with contrasting grits on each face are popular entry points into freehand sharpening. Grit progression from 400-1000 through to 3000-8000 produces a polished working edge on most kitchen and outdoor knives.
